Since raw beans contain toxin phytohaemagglutinin, it needs to be destroyed first by boiling before cooking. There are different ways of cooking this dish, some people tend to boil the kidney beans along with spices, while some boil it with salt and then cook it with spices. Since they retain their shape even after cooking, they make great beans for simmered dishes as well.
